'Famously Hot and Healthy' recipe contest links City of Columbia, Arnold School, Columbia's Cooking!

Stir up some excitement in your kitchen and take part in the "Famously Hot and Helathy" recipe contest. Now is the time for home chefs to shine!

The City of Columbia, Columbia's Cooking! and the Arnold School of Public Health are partners in this creative endeavor. Recipes for your healthiest entrée, side dish or dessert are being accepted through Wednesday, Nov. 23.

The contest, recently announced at the Columbia's Cooking! test kitchen at USC, is the collaboration of Judge DeAndrea Benjamin, wife of Columbia Mayor Steve Benjamin, and Tameika I. Devine of Columbia City Council, busy moms who want children to develop food and nutrition habits. Katherine Shavo of Columbia's Cooking! of the Arnold Schooll's Cancer Prevention and Control Program has been worked to develop the criteria for the contest and also will lead preliminary judging of the recipes to ensure that each one meets the specifications of the contest.

The final judging will be Dec. 15 at the Columbia's Cooking! kitchen.

Recipe Categories and Criteria to Enter

  • Entrées: Entrées should have smaller (2-3 ounces of cooked) meat portions. The emphasis is on non-meat protein sources (beans, eggs, nuts, seeds and low fat cheese/dairy) and fish and seafood. Vegetarian and vegan entrees are encouraged.
  • Side dishes: Utilize oils over solid fats, low to moderate in sodium, contain/emphasize whole grains, minimally processed vegetables or fruits and low fat dairy.
  • Desserts: Utilize whole grains, low fat dairy, fruits, dark chocolate, nuts and seeds, low in salt, added fats and added sugars.

  • Format: All recipes should be typed or legibly written; list the number of servings made and serving size; contain understandable and measurable ingredient amounts and instructions.
  • Recipes must be submitted by Nov. 23: Finalists will present their recipes at Columbia's Cooking! Demonstration Kitchen on Dec. 16. Prizes for the top three entries. The winning recipe will be featured on Pawley's Food Truck. All entries that meet the criteria will be printed in the Let's Move! Columbia Cookbook.
