Classes offer wonderful way to learn about different cuisines

There’s something about fall that kicks up the appetites of foodies all across the Midlands.

From tailgating at Williams-Brice to the State Fair Midway, the sights and smells are nigh irresistible when savored against Carolina blue skies.

Fall also is prime time for Columbia’s Cooking!, a program of the Arnold School’s Cancer Prevention and Control Program that offers popular cooking and nutrition classes to the public.

In operation for about two years, the Columbia’s Cooking! kitchen can be found at 915 Greene St. in the Discovery I building. The site is part of the University’s Innovista research district.

In operation year-around, the program usually features two healthy cooking classes per month, each with low-fat menus, using fresh fruit and vegetables and seasoned with herbs and spices chosen for their anti-inflammatory qualities.

The classes are a wonderful way for people to experiment with different cuisines without an expensive investment in time or money. The classes are not free, but USC works to keep costs at a break-even rate,

SEPTEMBER 30

Cooking with Chocolate

6:30-8:30 PM | $35/person

OCTOBER 5, 12, 19, 26 AND NOVEMBER 9

Indian Cooking Series (5 classes)

6 - 8:30 PM | $40/class or $160 for 5 classes

Join Indian cuisine chef Devi Raju, for one or all five classes, to learn about ingredients and preparation methods for traditional Indian dishes. To register, call or e-mail Katherine Shavo at (803) 576-5636 or shavo@mailbox.sc.edu.

October 5 - Participants will learn how to make yogurt, along with recipes for Indian dishes centered on chicken, soup, basmati rice and a seasonal vegetable.

October 12 - Participants will be making chutney, puri (bread), sagu (vegetable, pakoda (appetizer), and sweet pudding.

October 19 - Participants will be making chicken do piaza, dal with spinach, corn and squash, garlic rice, tomato and cucumber riata.

October 26 - Participants will be making chapata (flat bread), choley, potato curry, masala vada (appetizer), mint chutney.

November 9 - This class will focus on North Indian cuisine. Participants will learn how to make paneer, along with recipes for a meat curry, mutter paneer, cabbage and ghee rice.

OCTOBER 14

Your Seasonal Diabetic Diet

6:30 - 7:30 PM | $15/person

With the cold months approaching, it’s very easy to reach for high-carbohydrate, high-fat comfort foods. In this cooking demo, registered dietitian Kay MacInnis will use seasonal and regional foods to provide healthy and diabetic-friendly alternatives for your favorite comfort foods. The Umami Experience

Vegetarian Cooking

Gwen Preston leads this hands on class with new recipes, ideas and inspiration for vegetarian meals. This class is for practicing vegetarians seeking new ideas, new vegetarians or the veggie-curious among us. Learn how to add excitement to meals and make dishes that will have even the pickiest friends and family eating their vegetables.
